Aloo Baingan Recipe is simple and delicious north Indian side dish. Brinjals are good for our heart because it is a rich in fiber and antioxidants.I learned this aloo baingan recipe from my mother. It is a perfect combination and it goes with chapati or rice.
250 gms brinjals (baingan).
2 small potatoes(aloo).
3/2 tsp garlic paste.
1 finely chopped green chilli.
1/3 tsp red chilli powder.
¼ tsp black pepper powder.
¼ tsp asafoetida(hing).
½ tsp coriander powder.
½ tsp cumin seeds(jeera).
1/3 tsp turmeric powder(haldi).
2 tsp roasted and semi grinded peanuts.
½ tsp dried amchur.
½ tsp garam masala powder.
1 tbsp oil.
Required salt .
¼ cup water.
How to cook Aloo Baingan Recipe
1 . Wash the brinjals and potatoes.
2 . After that cut the baingan and potatoes in equal size.
3 . Take oil in a pan and heat them on medium flame.
4 . Now add cumin seeds and asafoetida , allow to crackle.
5 . Now add chopped green chilli and garlic paste, saute for a minute.
6 . Now add turmeric powder , black pepper , chilli powder, coriander powder and salt, mix well.
7 . After that add sliced potatoes and water,stir well and cook for 2-3 minutes.
8 . Now add sliced brinjals and stir well.
9 . Now cover the pan and cook on a low flame for 10-15 minutes, stir well.
10. When it completely cooked then spray garam masala powder, amchur powder and semi grinded peanuts, mix well and cook for a minute.
11. Now garnish with coriander leaves and serve Aloo Baingan with chapati or rice.
